Prassopita - Leek and Cheese Pie


This is a kids-favourite pie because of leek's delicate flavour. If you prefer to make small pastry pie rolls, you will have an excellent school or office snack.

  • 500 grams leeks, washed and chopped
  • 250 grams graviera cheese, grated
  • 250 grams feta cheese, crumbled
  • 3 eggs, lightly beaten
  • 150 grams of greek strained yogurt
  • 1/2 lt milk
  • 1/3 cup of all-purpose flour
  • 3 tbsp extra virgin olive oil
  • 2 spring onions, chopped
  • 8 thick filo pastry sheets
  • extra virgin olive oil for brushing the sheets

Heat the olive oil in a pan and sauté the leeks for about 5 minutes, then add the onion and continue sautéing until both are soft and tender. Add the flour, stir and continue by pouring the milk. Cook for 2-3 minutes. 

In a large bowl, beat the eggs well then add the yogurt, graviera and feta cheese and the leeks and onions mix. Mix well.  

Preheat the oven at 180ºC/350ºF/gas 4Brush a 2 1/2-litre baking dish with olive oil. Lay one sheet of filo on base and sides and brush with olive oil. Repeat with 3 more sheets. Spread mixture over top. Cover with remaining filo, brushing each sheet with olive oil. Trim excess pastry with kitchen scissors and tuck edges into sides of dish. Brush top with butter and score in diamond patterns. Bake for 1 hour minutes, until golden and knife comes out clean from the center.
