sweet pastry snack

A great treat for kids or school snack are these pastry windmill-shaped tarts with sweet or salty filling. All you need is puff pastry and a lot of imagination. For the salty version I prefer mozzarella and basil pesto and for the sweet, cherry jam and white chocolate.
Prep Time: 1 minutes
Cook Time: 14 minutes
Total Time: 15 minutes

Ingredients per sweet Windmill:
  • 1 Puff Pastry square, thawed
  • 1 tsp of your favorite jam (I used sour cherry jam)
  • white chocolate or castor sugar
  • beaten egg to glaze
Ingredients per salty Windmill:
  • 1 Puff Pastry square, thawed
  • 1 tsp basil pesto 
  • 1-inch square mozzarella
  • beaten egg to glaze


Preheat oven to 220°C/425°F/gas 7. Place the pesto or the jam in the centre of the pastry square, and top the salty windmill with a piece of mozzarella.
Make cuts from each corner into the centre, stopping at the filling, and brush edges with the glaze. Bring one corner into the centre, press down lightly, then repeat with every alternate corner so that you create a 'windmill' effect.
Glaze the top and bake for 13-14 minutes until pastry is risen and golden. You can decorate the sweet windmills with castor sugar or melted white chocolate
