Fish and potatoes

A great and healthy meal for kids. It has an easy one pot type set up (always a plus) and it’s Mediterranean in influence. 
Serves: 1

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

  • 1 sole fillet
  • 2 tbsp extra virgin olive oil
  • 1 potato, in small cubes
  • 1 carrot, in fine slices
  • 1 zucchini, in fine slices
  • 1/2 onion, in fine slices
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • 1 cup of chicken or vegetable stock
  • 1 tbsp chopped fresh oregano


    Heat the olive oil in a medium pan. Add the onion, the potato, the carrot and the zucchini and cook for 3-4 minutes until softened. Pour in the stock, the oregano and the lemon. Cover and cook over a medium heat for about 15 minutes, until the potatoes are soft. Place the fillet on top, add the butter, cover and cook for 10 more minutes.
