Flour Pie with Cheese

This is the famous pie with cheese from the villages located in the mountains of Epirus, an ancient recipe that has raised generations of Greeks over very difficult times. It takes 15 minutes to prepare and it is a great snack for a savory brunch.

Cook Time: 5 minutes
Total Time: 15 minutes

  • 1 cup of all purpose flour
  • 1/2 cup of water
  • 1/3 cup of extra virgin olive oil
  • 1 tsp salt
  • 1 cup of feta cheese, crumbled


    Mix the 4 first ingredients in a bowl and mix by hand until you get a soft and malleable dough. Divide the dough in 4 small balls and cover with some flour. Run each one of the doughs through the pasta machine use setting number 6. Add the feta cheese in the middle, wrap it like an envelope and fry it using olive oil.

    Sounds so simple to make.
    Would you change the spices to make as a sweet?

    It's a great snack! If you like you can use mascarpone cheese (here in Crete we use myzithra), refrigerate the pies for 10 minutes, before you fry them and pour some honey and cinnamon to make them a sweet dessert!
